When John Gunther stated that, “All happiness depends on a leisurely breakfast” I think he had the Rainbow Restaurant in mind.
I discovered another Fort Collins gem today when I visited the Rainbow Restaurant. Quaint, local, charming, vegetarian friendly, and welcoming are some of the first words that come to mind when I think of my experience. I couldn’t believe I hadn’t been here yet. The food was great, and the staff were very friendly. This morning was a little bit chilly and I’m bummed that winter is fast approaching because I’ll have to forgo that leisurely breakfast on their great patio til next year. Just one more thing to look forward to in Fort Collins and of course this doesn’t mean I can’t go back in the mean time.
The location on Laurel right across from the north end of campus is great for CSU students looking for a good breakfast joint between classes or a early start to the day.
Things to love about Rainbow:
- Awesome outdoor patio
- A plethora of vegetarian friendly dishes
- Down to earth friendly staff
- The Groatmeal – a combo of homemade granola and oatmeal
- Bloody Mary’s
The Rainbow Restaurant specializes in offering vegetarian meals but meat lovers shouldn’t be turned off. There are plenty of meat options available too.
Fort Collins natives may recall that the Rainbow was located at the current Thai Pepper location for its first 16 years before it moved to its current location.
